Turmeric Coconut Rice

  • 1 cup jasmine or basmati rice
  • 1 tablespoon coconut oil
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1 can (about 14 oz) coconut milk
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Fresh cilantro, chopped for garnish
  • Squeeze of lime juice (optional)


  1. Prepare the Rice:
  • Rinse the rice under cold water until the water runs clear. This helps to remove excess starch and prevent the rice from becoming sticky.
  1. Cook the Aromatics:
  • In a medium saucepan, heat the coconut oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent, about 3-4 minutes.
  • Stir in the turmeric, cumin, and black pepper, and cook for another minute until the spices are fragrant.
  1. Cook the Rice:
  • Add the rinsed rice to the saucepan and stir to coat the grains with the spice and onion mixture.
  • Pour in the coconut milk and water, and add the salt. Stir everything together and bring to a boil.
  • Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  1. Finish the Dish:
  • Remove the rice from the heat and let it sit, covered, for 5 minutes. After 5 minutes, fluff the rice with a fork to separate the grains.
  • Squeeze a bit of lime juice over the rice for a touch of acidity, if desired, and garnish with chopped cilantro.
