Ingredients
  

  • 2 Cups All Purpose Flour
  • 1/4 Cup Sugar
  • 1 Tbsp Baking Powder
  • 1/2 tsp salt
  • 1/2 Cup cold unslated butter Cubed
  • 2 tsp Lavender flowers
  • 2 Tbsp Honey
  • 2/3 Cup Heavy Cream Plus extra for brushing
  • 2 Tbsp Coarse Sanding Sugar Optional

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  • Stir in the dried lavender.
  • Drizzle in the honey, then pour in the cream. Stir gently until a dough forms—don’t overmix.
  • Turn the dough out onto a floured surface. Pat it into a 1-inch thick circle.
  • Cut into 8 wedges and place on the baking sheet.
  • Brush the tops with cream and sprinkle with coarse sugar if you like.
  • Bake for 15–18 minutes, or until golden brown.
  • Let cool slightly, then serve warm with butter, more honey, or a dollop of clotted cream if you're feeling fancy.
