Homemade Breakfast Sausage

Making breakfast sausage is one of those unsung recipes that anyone can do. It’s always tastier than anything you buy, and you can tweak the ingredients just how your family likes it. I recommend mixing, making a little patty and frying it up to see how you did.

Pro Tip: Sage is extremely important for breakfast sausage flavor, but the flavor intensifies as it ages-in the freezer or if you make this recipe and cook it later(as I do). Be sure to use a light hand with sage at first. You can always add more!


  • 1 pound ground pork (you can also use turkey for a leaner option)
  • 2 teaspoons fresh sage, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon crushed red pepper flakes (optional for a bit of heat)
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil, for cooking


  1. Combine the Sausage Mixture:
  • In a large bowl, mix together the ground pork, sage, salt, pepper, marjoram, red pepper flakes, nutmeg, brown sugar, garlic, and onion. Mix well until all the ingredients are thoroughly combined. It’s best to use your hands to ensure the mixture is evenly blended.
  1. Form the Sausages:
  • Take small amounts of the sausage mixture and form them into patties. You can make them as large or as small as you like, but typically, about a 1/4 cup of mixture per patty works well. Flatten them slightly to cook evenly.
  1. Cook the Sausages:
  • Heat the olive oil in a large skillet over medium heat. Place the sausage patties in the skillet, and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. The internal temperature should reach 160°F (71°C) for pork.
  1. Serve:
  • Serve the hot sage breakfast sausages with your favorite breakfast sides like eggs, toast, or pancakes. These sausages also pair beautifully with apple sauce or mustard.

These homemade sage breakfast sausages are not only flavorful but also a healthier alternative to store-bought versions, as they are free from preservatives and artificial ingredients.
