This Dill Cottage Cheese Bread offers an irresistibly tender crumb, courtesy of the cottage cheese, which not only adds a rich depth of flavor but also ensures each slice is moist and soft. The subtle, herbaceous note of dill complements the slight tanginess of the cottage cheese, making this bread a delightful twist on your usual homemade loaf.
Dilly Bread
Ingredients
- 1 1/3 cup cottage cheese
- 1/3 cup water
- 1 egg
- 3 Tbsp butter
- 4 cups AP flour(or bread flour if you have it)
- 1 Tbsp sugar
- 2 1/2 tsp dill seed, 1 Tbsp dill leaves-chopped
- 1 tsp salt
- 1/4 tsp fine ground pepper
- 1 1/4 tsp active dry yeast
Instructions
- Add ingredients according to your machine instructions. In my case, I add wet then dry.
- Select the white bread setting. The crumb is ‘very’ tender. A light crust setting would be best for this.
- If you have an electric knife, you can cut this while warm, but if not, allow it to cool before slicing.

Hi,, does the cottage cheese Egg , and water need to be at a certain temperature? Do you drain the cottage cheese? I am new at this. Thank you.
Hi Jo Ann. Sorry for the late reply. We moved the farm and things have been silly-busy. The ingredients do not need to be room temperature, and I don’t drain my cottage cheese. I hope you can give this a try now that it’s definitely bread baking weather.
Warmly,
Amy
