This is another holiday flavored soda, that uses the tartness of cranberries, and the freshness of mint, to make a fruity soda the whole family will love. If you have a SodaStream, this is a wonderful alternative to their syrupy sweet flavors. Plus, this uses actual sugar and not some chemical recipe.
Mine is garnished with a sprig of fresh rosemary that I poked through two fresh cranberries. Isn’t it pretty? Next time, I will add a slice of lime on the side of the glass. NOM!
Cranberry Mint Natural Soda
2 Cups water
2 Cups white sugar
2 Cups fresh, whole cranberries
Combine in a sauce pan, over medium heat.
Heat and stir until sugar is dissolved and berries have become softened (about 5 minutes).
Remove from heat.
Add 6 teabags of peppermint tea to the berry/sugar mixture.
Steep until syrup becomes a rich, red color and tastes minty enough (about 15 minutes)
Strain and press out as much of the sugar syrup as possible, by pouring through a mesh strainer and using the back of a large metal spoon to mash the berries gently against the strainer.
Use 1/4 cup per bottle of soda water made in a SodaStream, or to taste.
