Magic Coconut Pie


When planning my meals for the week, I like to be certain to have a treat or two on the list. It’s easier if I choose things that don’t take up much extra time, or that can be put in the oven with something else. That way, dessert cools while we eat dinner.

This Magic Coconut Pie is a winner. It makes its own crust and serves the whole family with extra left over since it tastes so rich.

I make this in an 8X8 square pan, so it’s not pie pieces that you are serving, more like brownie squares of coconut delight!  Next time, I will serve it with whipped cream, but it is just fine without it.

Magic Coconut Pie

In a large bowl, whisk together the following, until smooth:

2 cups milk

1/2 cup brown sugar

1/2 cup white sugar

4 eggs

1 cup shredded coconut

1/2 cup flour

6 Tbsp butter (margarine can be substituted)

1 tsp vanilla

1/2 tsp salt

Pour into a greased 8X8 square pan.

Sprinkle with Cinnamon and Nutmeg, or easier still, Apple Pie Spice

Bake at 350 degrees, for 1 hour.

Let cool slightly, to help keep its shape. This dessert is fantastic hot or cold.
